        RESEARCH FOCUS

    The focus of my research includes the application of physical and chemical approaches to food processing and preservation including:

        Evaluation of quality attributes during processing and storage, and the influence of pre-treatments and processing methods on physical, chemical, physicochemical and sensory attributes of food materials.
        Modelling of water removal operations during osmotic dehydration and drying of foods.
        Moisture sorption and package design of food systems.
        Use of natural bioactive substances for food preservation.
        Rheological characteristics of food materials as influenced by material, processing and chemical composition.
